Our process manager Janek not only ensures that all processes at DIRTS are well thought out and that we are constantly optimizing and developing, but also in his free time. He takes care of his very own bee colonies. And since we are very interested in the history of bees and honey, Janek took us to his forest property and showed us how he extracts honey and why he does it all. Here are a few impressions for you!

How is honey actually obtained?
- Simply put, bees collect honeydew, or nectar, from the flowers in the area and transport it back to the hive, where other hive bees process it further.
- Through enzymatic processing, the water content of the nectar is reduced and it becomes honey
- In the hive, the honey is stored in honeycombs, which the beekeeper then extracts.
Regionally sourced honey has several benefits, both for the environment and for health.
- Very sustainable, as nothing needs to be imported and CO2 emissions are reduced.
- Honey bees are also important pollinators of cultivated and wild plants and contribute to biodiversity and habitat conservation.
- Allergy sufferers should pay particular attention to local honey, as honey from the beekeeper around the corner contains regional pollen, which can lead to allergy desensitization.
- Honey also contains antioxidants and enzymes that strengthen the immune system and have anti-inflammatory effects.
